Easy Garlic Butter Chicken Bites

Last night I was going to make smothered chicken and I went to pull the recipe from my email and it was not a valid URL so I found this recipe for Garlic Butter Chicken Bites and I'm so glad I chose this one instead! I enjoy chicken bites better because they cook better and faster - I don't have to wait and check the middle of the chicken to make sure it's cooked all the way. I also love how they can cook a little longer and have that burnt and browned taste to them. All three of us devoured these bites with Asparagus and garlic bread but these would also go well with a salad or other veggies of choice. Jace asked if there were leftovers and unfortunately there wasn't any. We made just enough for 3 servings. Jace added his chicken bites to pita bread and created a chicken taco. Kevin and I had ours with the sauce on top. This recipe originated from Food & Wine.   

Ingredients:
2 tbsp flour
1 tsp mrs dash chicken seasoning
1/2 tsp garlic powder + 2 tbsp garlic powder
1/4 cup chicken broth
4-5 boneless, chicken filets, diced
2 tbsp avocado oil
1/4 cup butter, cut into 1 tbsp pieces
basil, oregano, to top

Directions:
Whisk together flour, mrs dash chicken seasoning and garlic powder in a large bowl.

Add chicken pieces and toss until combined and coated. Heat avocado oil in a large skillet over medium-high. Once oil has been set for a few minutes (and shimmering), ad the chicken pieces and cooked until browned, about 3-4 minutes. Flip chicken pieces and cook another 2-3 minutes. Remove from skillet and transfer to a plate. 

Do not wipe the skillet. Reduce heat to medium, add garlic powder and chicken broth. Add butter, one tbsp at a time and stir until completely melted before adding the next butter slice. Once all four are melted, remove from skillet. 

Pour sauce over chicken and serve with garlic bread and asparagus.
