Garlic Butter Chicken Bites
Last night, I decided to try this quick, easy garlic butter chicken recipe, and my family devoured it! The bite-sized pieces cook fast, get crispy, and the garlic butter sauce is full of flavor. You can pair these chicken bites with garlic bread, roasted asparagus, or a simple salad for a quick family-friendly meal.
Feel free to customize this recipe with your choice of protein – shrimp or tofu work great as alternatives to chicken!

Recipe inspiration comes from Food & Wine. We eliminated salt due to the fact that Kevin has kidney disease so he is on a lower sodium diet, we replaced salt and lemon-pepper seasoning with mrs. dash seasoning, we used avocado oil instead of canola oil, garlic powder in place of garlic cloves, chicken broth in place of chicken stock, regular butter instead of unsalted butter, and oregano instead of fresh parsley.
We also eliminated the lemon wedges. I adapted this recipe for a low-sodium diet by using Mrs. Dash seasoning and avocado oil instead of canola oil, but feel free to adjust based on your preferences.
If you like your dishes with a kick, feel free to add crushed red pepper or cayenne pepper to taste. Looking for a twist? Swap the chicken for shrimp or tofu for a lighter option.
Ingredients for Garlic Butter Chicken Bites:

• 2 tbsp flour
• *1 tsp Mrs Dash Chicken Seasoning
• 1/2 tsp garlic powder in addition to 2 tbsp garlic powder
• *1/4 cup chicken broth (or*Organic Vegetable Broth as a substitute)
• 4-5 boneless, chicken filets, diced (feel free to swap chicken out for shrimp or tofu for a twist)
• 2 tbsp avocado oil
• 1/4 cup butter, cut into 1 tbsp pieces
• basil, oregano, to top
Directions For Easy Garlic Butter Chicken Bites:
Step #1 Whisk together flour, Mrs. dash chicken seasoning and garlic powder in a large bowl.
Step #2 Add chicken pieces in bowl of seasonings and toss until combined and coated.
Step #3 Heat avocado oil in a large skillet over medium-high.
Step #4 Once oil has been set for a few minutes (and shimmering), add the chicken pieces and cook until browned, about 3-4 minutes. Flip chicken pieces and cook another 2-3 minutes.
Step #5 Remove from skillet and transfer to a plate.
Note: Don’t wipe the skillet – you’ll use the flavorful bits left behind in the next step.
Step #6 Reduce heat, add garlic powder and chicken broth, then stir in butter, one tablespoon at a time, until fully melted.
Step #7 Pour sauce over chicken and serve with garlic bread and asparagus.
Storage & Reheating Tip:
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave for best results.
