Air Fryer Caesar Chicken Recipe
What a weekend! Not only am I recovering from a 2.5 month infection (cough and congestion - although the past few days I've been slowly feeling better), Jace came home from school early on Friday due to a headache - that turned into a cough and congestion so I was really hoping he wasn't getting what I have. We were going to go to the skatepark Saturday and decided to reschedule to next week so he could get some sleep and he is feeling better today. My doctor suggested that I still go on a walk (and I have been going on a walk the past four days outside!) and so I've been trying to stay active around the house - especially since I'm unemployed. I have been cooking more which I absolutely love (and my Mom noticed too!) and been reselling some items on Poshmark as well as blogging more and moving. I hit my steps the last 2/3 days and was only less than 100 steps short of hitting my steps yesterday! Oh, and of course watching the Utes and Broncos football! The Broncos are struggling since the beginning of the season, I'm so disappointed! I had high hopes for Bo Nix!
Anyways, last night for dinner I made this Air Fryer Breaded Chicken. It was like a Caesar Salad type chicken which I thought was interesting. The other interesting thing about it is that usually there is an egg dredge when it comes to breaded chicken but there wasn't any egg in this one - which was good because we didn't have any eggs any way. Instead, the dredge was Caesar Dressing and Milk - interesting right? Recipe inspiration came from AllRecipes and I will definitely make this again. We served ours with green beans, mashed potatoes + gravy, and Hawaiian rolls. I wanted to try this because I like Caesar Salad and thought this would be a unique twist on breaded chicken. I also love the fact that this was Air Fried which made the chicken extra crispy and took less time than baking.
Ingredients:
1 cup Kellogg's Corn Flakes Crumbs
1/2 cup shredded parmesan cheese
2 tsp dried oregano
1 tsp ground mustard
3/4 tsp garlic powder
1/2 tsp onion powder
1 cup Caesar Dressing
1 cup Milk
PAM or cooking spray
Pepper, to taste
Directions:
Gather all of the ingredients together.
In one bowl, add breadcrumbs, parmesan cheese, oregano, mustard, garlic powder, onion powder, and pepper. In another bowl combine one cup milk with one cup Caesar dressing.
Preheat the Air Fryer to 390 degrees. Coat the Air Fryer basket with cooking spray. While the Air Fryer is preheating, dip the chicken into the milk and Caesar dressing followed by the breadcrumbs.
Cook about 6-8 minutes per side, until cooked all the way. Slice the chicken in half to check doneness. Add to a separate plate and serve with sides.
