Easy Chicken Pesto Pasta

I am so glad it's the weekend, aren't you? Although we are mainly taking it easy, we watched some of the Olympic breakdancing this morning which was really fascinating, Jace and I discussed what he wanted for his birthday and Christmas (I know, it's only August) and now I'm currently working on getting my SEO Certificate through Hubspot Academy. 

Tomorrow the Colts and Broncos play in pre-season so I'm looking forward to that and then I will be focusing on getting my Google Ads Certificate and also the Facebook Blueprint Certification. While I'm out of work (and still sick) I may as well be doing something productive and very useful for my future. 

Last night for dinner, I made this Chicken Pesto Pasta for Jace and I. This is another one from Alese. Very healthy, light, and delicious. I wasn't too sure how I would like this pasta since I don't use pesto often. I was surprised at how much I ate (and how much more I wanted). I try and use healthy ingredients when possible so I decided to use a Fat Free mozzarella cheese. I had never heard of or used fusilli noodles but I was able to buy them on Amazon. You really could use any type of noodles but this worked great for the type of meal we made. It was so delicious, flavorful, and cheesy. Serve with garlic bread, a side salad, and even some veggies.

Ingredients:
1/2 box of fusilli noodles
2 chicken breasts (fully cooked, we cooked ours on the stove for 4-5 minutes per side with seasonings)
4 tbsp butter
2 tbsp basil pesto
3/4 cup heavy whipping cream
1 cup shredded parmesan cheese
1/2 tsp Italian Seasoning
Sprinkle of red pepper flakes
1/2 cup shredded mozzarella (fat free)
Dried Oregano

Directions:
Cook the pasta according to the box directions. While the pasta is cooking, cook chicken breasts according to your liking. Once the pasta is done, drain and set aside.

Once chicken is cooked in a pan, remove from the pan and use the same pan to cook the sauce. On medium heat, melt butter and pesto. Add garlic powder and stir together. Pour in heavy cream and heat until bubbly - this should only be a few minutes. Slowly add the parmesan cheese while stirring and then season with Italian Seasoning, Oregano and red pepper flakes.

Pour the sauce on top of the noodles and stir until noodles are covered.

Add to a plate, top with chicken and mozzarella cheese. Serve and enjoy!
