Chicken Parmesan

I have been on my computer working on the SEO Hubspot Certification this morning and I'm really enjoying it. 

Jace came in this morning and said, "Are you working?" and I said, "I'm just doing a few things" and he said, "I don't want you to work today" so once I'm done with this blog I'm going to hang out with him. 

He starts school back up in three days which is so hard for me to believe. Also, the fact that he's going into 8th grade (and still wants to spend time with his mama) completely blows my mind. 

Last night I made this Chicken Parm recipe from Clean Food Crush. Although it took awhile to make (it's not the easiest...or the cleanest), everyone wiped their plates clean! Chicken Parm has always been a family favorite (except Jace prefers to add Alfredo sauce to anything over spaghetti sauce). There were a lot of steps to this one but it was well worth it. I love switching out non-healthy ingredients for healthier ones which is why I chose Almond Flour, Olive Oil, and I tend to use a low-sodium marinara sauce. I use chicken cutlets/filets because they are thinner and cook better. We ate the chicken before I could even get a good picture! Serve on spaghetti noodles, with a side of garlic bread and a salad. 

Ingredients:
One jar of marinara sauce
1 tsp garlic powder
4 tbsp olive oil
5-8 thin chicken cutlets/breasts
Pepper to taste
3 eggs
1 cup almond flour
1 tsp Italian Seasoning
1/2 tsp onion powder
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese
Dried Basil to top 

Ingredients for Chicken Parmesan

Directions:
Preheat oven to 400 degrees. Add the marinara sauce to the bottom of a baking dish and top with some pepper. Mix and set aside. Season chicken with pepper on both sides (I don't use salt anymore). In a shallow plate, combine parmesan cheese, onion powder, Italian seasoning and almond flour. 

In a medium bowl, beat the eggs together. 

Heat 2 tbsp oil in a large skillet over medium to medium/high heat. Dip each chicken cutlet into the eggs and then cover it in the parmesan and flour mixture. Add cutlets to the skillet and cook 2-3 minutes per side, until browned and crispy. 


Set the oven to 400 degrees F. Transfer chicken to the baking dish with marinara sauce.

Top chicken with mozzarella cheese and basil.

Oven Baked Chicken Parmesan

Bake until sauce is bubbly and cheese is melted - about 5-10 minutes. Try and take a photo before it gets devoured:)
