Homemade BBQ Chicken Pizza

Has anyone else been watching the Olympics like crazy, or just our household? I swear we have the Olympics on all day, it's been so fun to watch!

A few nights ago we made this Homemade BBQ Pizza and it turned out way better than I thought it would. The original recipe is from Family Cookbook Recipes and we did make it our own - we used regular BBQ sauce instead of spicy, no pepperoncini peppers, onion powder instead of red onion and no cilantro. It was super easy to make and this one will be on repeat. Also, we had 3-4 slices leftover so another 3-4 serving dinner. I love making homemade pizza, it's so much healthier than regular pizza and you actually know what ingredients are going on it. I purchased the pre-baked pizza crust from Albertsons and this recipe was really easy to make. Jace has been requesting a homemade pizza for quite some time and we thought that a BBQ Chicken pizza would be a different and unique twist on the regular pepperoni pizza we get. We are also big fans of the California Pizza Kitchen frozen pizza but homemade is always better. If you have time to put the chicken in the crockpot, that seems to taste better than boiling the chicken but it really depends on how much time you have or how much you want to spend on the chicken. Pair with a fresh salad. 

Ingredients:
1 pre-baked pizza crust
1 cup BBQ sauce
1 tbsp onion powder
2-3 boneless chicken breasts
2 cups Colby-Jack cheese
Pepper

Directions:
Boil chicken so it can easily shred (place chicken breasts in a pot and pour chicken broth over the chicken until it covers them. Add pepper and garlic powder. Cover the pot and bring the liquid to a boil. Once boiling, lower the heat and cook about 8-10 minutes on simmer and then shred with two forks.) 



Preheat oven to 350 degrees F. Place pizza crust on a baking sheet. Spread BBQ sauce on crust. Top with chicken and Colby-Jack cheese. 



Bake in oven for 15 minutes. Devour.
