Chocolate Chip Energy Bites

You may or may not have noticed, but I haven't posted a blog since March. There are several reasons for that. The first one is we started moving our dinners to EveryPlate (weekly meals delivered to your door, healthy ingredients and they only take 20-30 minutes to make) which has been amazing because I can choose meals that our family will love and I don't have to stress over what to make every week. 

The second reason has been since January, Kevin has had really bad nerve damage. It got so bad that we had to go to the ER in Utah when we were there in March and he has been on short-term disability since April 4th. The final result from Kevin's MRI that he received, is he has a bulging disc and moderate stenosis so he has been in pain (but getting better) and is currently on several medications as well as doing physical therapy. His doctor has approved him to go back to work with one accommodation of not lifting more than 25 pounds but at this moment, his work is unwilling to accommodate him. 

I somehow convinced Kevin to take a trip to Disneyland with us and my sisters family for a few days the end of May. I called him my (storm) trooper as he was able to ride on most of the rides even with a hurt arm/shoulder/neck. 


So that's a quick life update from the Guerrero/Holland clan. Now to the recipe (which is why you are all here) - this is another recipe from Madison. In case you can't tell, I love her protein snacks. I think my last 2-3 blogs have been her recipes. They are quick, easy and healthy which is exactly what I need at this point in my life. I did adjust the chocolate chip measurement because we ran out and then I linked all of the specific ingredients I used for mine below. 

1 1/2 cup old fashioned oats
1/2 cup Vega Vanilla Protein Powder
1 1/3 cup PBFit
1/2 cup Sugar free maple syrup
1/4 cup semi-sweet chocolate chips

Add all ingredients to a large mixing bowl. 

                                                            

Stir to combine.

Roll up in balls. For me, I made about 14 bites.

Refrigerate for at least 30 minutes. I have been eating two per day so they will be gone this weekend:)
