Swedish Meatballs Recipe

I made this recipe a few weeks ago but just now getting to write a blog about it. Inspiration found through Best Recipe Box. I always try and add a healthier touch to recipes, as much as I possibly can so my version is below. This recipe was enjoyed by my entire family, including 13 year old Jace. I love that he enjoys healthier options :) Sometimes he doesn't realize the healthier options I use but in this recipe, I included - whole wheat panko breadcrumbs, 90/10 ground beef (compared to 85/15 or 80/20, this one is way healthier), unsalted butter (we try and eliminate salt when and where we can), whole wheat flour, and low sodium beef broth. We also used milk which is way better than heavy cream (I didn't realize this until I looked at the carton but heavy cream has loads of calories). This was unlike the regular Swedish Meatballs recipe that I usually make but I liked it and will make it again. We used spaghetti noodles but you can also use egg noodles as well. 

Ingredients For the Meatballs:
1 pound ground beef, 90/10
1 tbsp Onion powder
1/4 cup whole wheat Panko breadcrumbs
1 tsp garlic powder
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp pepper
1 egg
1 tbsp olive oil

Ingredients For the Gravy:
2 tbsp unsalted butter
4 tbsp whole wheat flour
2 cups low sodium beef broth
1 tbsp Worcestershire sauce
1 tsp mustard
Pepper
1/2 cup milk (or heavy cream if you have it)

Directions:
Combine all meatball ingredients in a bowl and mix well. Roll into 1 1/2 inch sized meatballs. Heat oil in a skillet over medium-high heat and add them in the skillet in a single layer. Brown all sides until they are nearly cooked through. Remove and set aside but keep the juices and tidbits in the skillet. 

Add the butter over medium heat. Whisk in the flour until smooth. Whisk in in the broth and continue whisking until smooth. Add in the milk, Worcestershire sauce and mustard. Season with pepper and bring to a boil. Add back the meatballs and simmer for 3-5 minutes. 

Serve with whole wheat pasta or you can eat them on their own.
