Healthier Buffalo Chicken Dip

Although this is a week late from Superbowl Sunday 2024, I did make this for Superbowl and it was enjoyed by my family! It was extremely easy to make and all ingredients were added to a crockpot. Now, to the recipe. I always try and make the recipes my own as well as add healthier alternatives if, and when, possible. Recipe inspiration - Iowa Girl Eats. We used chicken breast in the crockpot instead of canned chicken, 1/3 less fat cream cheese, lite cheddar cheese instead of Colby Jack cheese, half ranch seasoning mix & half lite ranch dressing, as well as Buffalo Sauce with Avocado Oil from Primal Kitchen. 

Ingredients:
2 large boneless, skinless chicken breasts
8oz 1/3 less fat cream cheese
4oz cheese (we used lite Colby jack, you can use any kind you prefer)
1/2 cup Primal Kitchen Buffalo Sauce with Avocado Oil
1/4 cup ranch seasoning mix
1/4 cup lite ranch dressing
Buns for sandwiches or chips for dipping

Directions: 
To a crockpot, add chicken, cream cheese, colby jack cheese, buffalo sauce, ranch seasoning and dressing and set on high for 4 hours. 

After 4 hours or so, shred the chicken (use two forks and shred right inside the crockpot). 


If the cream cheese is still thick, use a potato mashed to mash it up a little bit (it sounds weird, but it worked for me.) Let cook for another 30-60 minutes. 


Add to bread to make a sandwich or use chips and dip right into it! Enjoy!
