Pumpkin Waffles

This week is feeling like Fall and I absolutely love it. I'm not looking forward to this weekend where the temperatures plan on going back up to the 90s+. In the meantime, I'm enjoying my nightly walks and spending time in the cooler weather.  Yesterday for breakfast I made these Pumpkin Waffles. Not only do I love pumpkin flavors, but it's a healthy, easy breakfast that filled me up all morning. Making homemade waffles not only made my house smell amazing but it also is much better and more delicious than using a pre-made mix. All of the ingredients are recognizable and it makes me feel like I'm eating a healthy, wholesome meal. One serving made one waffle for me and I topped mine with sugar free syrup and pumpkin pie spice. Do you ever get so excited to try a recipe only to realize that you don't have the ingredients? Then you get the ingredients and realize you just got rid of your can opener and you are waiting for your new one to show up in three days but you don't want to wait three days to make the recipe so you Google "how to open a can without a can opener" and realize that you can actually open a can without a can opener and then you finally get to the recipe? (I'm seriously considering writing a blog post on how to open a can without a can opener, it was really cool.) That was me all morning. What a weekend! Not only am I recovering from a 2.5 month infection (cough and congestion - although the past few days I've been slowly feeling better), Jace came home from school early on Friday due to a headache - that turned into a cough and congestion so I was really hoping he wasn't getting what I have. We were going to go to the skatepark Saturday and decided to reschedule to next week so he could get some sleep and he is feeling better today. My doctor suggested that I still go on a walk (and I have been going on a walk the past four days outside!) and so I've been trying to stay active around the house - especially since I'm unemployed. I have been cooking more which I absolutely love (and my Mom noticed too!) and been reselling some items on Poshmark as well as blogging more and moving. Easy Garlic Butter Chicken Bites

Last night I was going to make smothered chicken and I went to pull the recipe from my email and it was not a valid URL so I found this recipe for Garlic Butter Chicken Bites and I'm so glad I chose this one instead! I enjoy chicken bites better because they cook better and faster - I don't have to wait and check the middle of the chicken to make sure it's cooked all the way. I also love how they can cook a little longer and have that burnt and browned taste to them. All three of us devoured these bites with Asparagus and garlic bread but these would also go well with a salad or other veggies of choice. How To Remove the Smell of Skunk from Inside Your Home

We have lived out in the countryside for more than four years and not once have we seen a skunk at our home, until last night. We have seen all sorts of animals, bugs, and insects ranging from deer to birds to turkeys to mice to our three "pet" cats, and even a few snakes. We have seen skunks dead on the side of the road or smelled them going into town, but nothing compares to having one right on your patio deck and inhaling the smell of skunk, thinking that you may be getting high from the smell of weed instead. We eliminated weed almost right away because we don't have any houses around us, and we don't smoke.  We followed the smell and it took us through our room, Jace's room and even the living room and kitchen. We feed the cats daily in hopes that they will eat the mice that keep coming into our home, but unfortunately they haven't been doing their job. How to Make the Best Pot Roast

Pot Roasts are a super easy meal that you can eat throughout the year. I didn't even realize how many previous blog posts I have made of pot roast until I went to write this one. This recipe that I'm about to share is very simple and all of the flavors come through - you have a ranch and Italian seasoning packet so you can taste the seasoning flavors and then you have a gravy packet which comes through in the thickness and juiciness and then the pot roast itself is so tender and it just falls apart in your mouth. I did add garlic powder, pepper, and onion powder as well as carrots and potatoes. Muffin Tin Chicken Pot Pies

Good morning and happy Tuesday! I hope everyone had a nice Labor Day weekend. I know I did! I woke up this morning to a nice giveaway win, but I also woke up to Kevin having COVID :( It's been one of those weeks...or maybe years, I don't know. I'm still recovering from COVID (I had it in July) but I am feeling better day by day. A few nights ago I had some energy so I made these Muffin Chicken Pot Pies. They are actually fairly easy to make and they were SO good. They were the perfect size too. I could have probably been fine eating one, but I did eat two, they were that good:) This recipe is from Taryn Newton on Facebook . I used boiled chicken breast, shredded, instead of Rotisserie Chicken and eliminated salt. Super good, crispy biscuit, soft inside, and a great combination of flavors. Easy Slow Cooker Ribs

It still may be over 100 degrees here still, but I will do anything to make an easy crockpot meal. These ribs were really good, they fell off the bone, and cooked perfectly with the right amount of flavor. I tried making these a few weeks ago but unfortunately the ribs we purchased smelled really, really bad. Just a word of advice, the ribs aren't supposed to smell. If they do, do not use them. I ended up getting a refund thank goodness and couldn't wait to reorder them to make this recipe. As you can see from the photos, the ribs were massive. I definitely didn't need to buy as many as I did but I did end up breaking them so they fit in the crockpot easier. It was a little bit difficult adding the seasoning and sauce on ribs that were so large, but it worked.  For future reference, I will be putting the ribs in a pan instead of on a baking sheet. The liquid unfortunately poured off the sides and with a pan, it will allow the liquid to stay in and around the ribs. I suggest

Homemade Big Mac Sauce

If you are looking for a Homemade Big Mac Sauce that comes as close to the real deal as possible (I've been watching too many episodes of Diners, Drive-In's, and Dives), this is it! I was surprised at how accurate this was! It was super easy to make too. We removed the onion and the fine sea salt and used Mayo with Avocado Oil it still tasted exactly like it! This recipe is from KeytoMyLime and it's for a Homemade Big Mac Sauce Recipe. If you love Big Macs but want to know what exactly goes into the sauce, this is for you. The sauce added a healthier touch with the Avocado Oil in the Mayo. This was initially made for the viral Big Mac Taco but it was a major fail for me. Happy Labor Day weekend! For me, it doesn't mean much since I don't have a job, but it's always nice to spend time with family regardless. Kevin and I went to the casino a few days ago which was nice and much needed, Jace spent the night with his friend and then he gets two sleepovers with his cousins before I spend the day in San Luis Obispo (SLO) tomorrow with my cousin and bring him home. I love that he has so many friends and so much support.  This school year, so far, has been way less stressful than in the past. Jace doesn't have homework and he currently has A's and B's. This time last year he already had a C or two. He can come home, we can spend some time with him, he has time for his game and then a chore or two so right now, this is the perfect schedule for all of us.
