Easy Mozzarella Chicken Recipe

I can't believe Christmas is in TWO DAYS!! I wanted to share this recipe before Christmas in case you are looking for an easy recipe to make before Christmas (or even on Christmas) and anytime in between. It was surprisingly tasty and the original recipe was pulled from Southern Living. This recipe is as good as it looks. I tend to burn chicken so the best approach I can suggest is heating oil on high and then lowering it down to medium. Keep an eye on the bottom of the chicken. If it is starting to burn quickly, lower the heat or remove the pan from the heat and let the heat lower before adding the pan back. Keep it on medium or a lower heat so that it cooks the chicken evenly. 

I used healthier ingredients for this recipe including wheat panko breadcrumbs, olive oil, wheat flour and unsalted butter. I never add salt to any of our recipes because Kevin was told by his doctor to use less salt/sodium. I try to replace ingredients with healthier ones when and where I can. We served this chicken with mashed potatoes and green beans. Other side suggestions include garlic bread or asparagus. Even a salad would be a great addition. 

Ingredients:
1 cup whole wheat panko breadcrumbs
3/4 cup mozzarella cheese
2 tsp That's Amore by Pinch Me Market
1 tsp black pepper
3/4 cup wheat flour
2 large eggs, beaten
Chicken breasts, pounded flat
2 tbsp olive oil (plus some)
2 tbsp unsalted butter (plus some)

Directions:
Stir together the breadcrumbs, mozzarella, That's Amore, and pepper in a medium bowl. 

Place the flour in another bowl and the eggs in a third bowl. 

Dredge the chicken breasts, one at a time, in flour, dip in eggs, and then in the breadcrumb mixture and set on a plate. Heat 1 tbsp olive oil and 1 tbsp butter over medium high heat in a large nonstick pan. Add chicken breasts to the skillet, two at a time, and cook without flipping, 3-4 minutes. 

Flip and cook another 3-4 minutes. Transfer to a plate and repeat the process, using more butter and olive oil as needed. *I would suggest turning the heat down a little bit if needed or the chicken will burn like mine, it ended up fine but keeping the heat a little lower will prevent that.
