Easy Healthy Pancake Recipe
If you are looking for a super simple, healthy pancake recipe, this is it! With only four ingredients, it can't be easier! This recipe is from Delish. The only thing I changed was using 1 tsp lime juice in place of lemon zest. Turned out delish (no pun intended)!
Ingredients:
1/2 cup almond flour
4oz cream cheese (we used whipped)
4 eggs
1 tsp lime juice
Directions:
In a medium bowl, mix all ingredients together until smooth. Let sit for 2 minutes.
In a skillet over medium heat, spray with PAM or cooking spray and pour in about 1/4 cup of the batter and cook about 2 minutes. Flip and cook for 2 more minutes. The first few took a little longer to cook so if you can, let the skillet sit over the heat for 30-60 seconds before adding the batter. Serve with bacon and sausage.
