Skillet Garlic Chicken
Another day, another chicken recipe! This one is a Garlic Chicken recipe from Amandas Cookin and can be found HERE. Like always, I removed the salt from this recipe. We also used vegetable oil instead of olive oil, garlic powder instead of garlic and thyme instead of parsley.
Ingredients:
3 large chicken breasts, cut into cubes
1 tbsp flour
1/2 tsp ground pepper
2 tbsp vegetable oil
1 tbsp garlic powder
1 tbsp thyme
2 tbsp unsalted butter
Ingredients for the gravy:
1 tbsp flour
1 cup chicken broth
1 tbsp unsalted butter
Directions:
Cut the chicken into cubes or chunks. Toss them with flour and pepper in a bowl. As the original recipe indicates, the amount of flour mentioned is perfect - it may not fully cover the chicken all the way or you may want to add more, but just realize the amount above is enough.
Heat the vegetable oil in a skillet over high heat until very hot - add the cubed chicken and cook in one layer about 5 minutes. They should have a brown crust. Turn them over and cook for 4-5 more minutes.
In a bowl, combine the garlic powder and thyme. Once the chicken is done, leave in the pan and add the butter and garlic powder bowl mixture to the skillet and coat the chicken. Use a spoon to remove the chicken to a plate and leave in the brown bits and extra thyme and garlic in the pan.
Add the butter from the gravy ingredients and cook over medium heat to melt. Add the flour and cook for one minute, stirring continuously. Slowly add the chicken broth and whisk to combine. Cook over medium heat. From here, I added the chicken back in the pan and covered them with the gravy.
Let it cook and coat for 2-3 minutes. Serve with asparagus and mashed potatoes.
