Healthy Cinnamon Pancakes

It has been so long since I have written a blog post. Almost a month which is extremely unusual for me. I have a few in draft but didn't end up finishing them - hopefully I can get them up shortly for you guys.

Summer is finally over for my 11 year old and he started school earlier this week. Last week my sisters were in town for the week. We celebrated four cousins birthdays with a piƱata, face painting, cupcake decorating, and a bounce house. Football is back (pre-season) so it's been fun watching the Broncos and Kevin and I are both working full-time so it's been a crazy time. Today I'm taking Kevin and Jace to get well-deserved pedicures (Jace's first one) and last night we spent hours playing War. 

I workout 3X per week (I'm on my 8th week) and I have lost 4 pounds since last week. I typically do a big grocery shopping haul every two weeks on payday and yesterday I went to Trader Joe's and purchased a lot of healthier options. We focused on kidney-friendly food these next few weeks and we typically try out recipes from DaVita when we go that route. If you have Chronic Kidney Disease, on Dialysis, have Diabetes or Vegetarian, they have different recipe options for you. 

We made breakfast for dinner last night which is always my fave! These are actually Maple Pancakes but I ordered Maple Extract from Amazon and won't get it until next week so we added Cinnamon as a replacement. Also, I didn't realize until this recipe that you can actually purchase Maple Extract, I never even knew that was a thing! If you want to use Maple Extract, just replace the cinnamon in the recipe with 1 tbsp extract. 

I initially didn't plan on doing a blog so I didn't take photos until halfway through making them. They were so good and there were compliments all around! I would recommend and we will make these again with the extract. 

Ingredients:
1 cup flour
1 tbsp sugar (I typically use Monkfruit but I kept it as regular sugar this time)
2 tsp baking power
1 pinch of salt (I don't use a lot of salt in my recipes)
2 large egg whites
1 cup milk
2 tbsp vegetable oil
1 tsp cinnamon

Directions: 
In a large mixing bowl, mix the flour, sugar, baking powder, cinnamon, and pinch of salt. Set aside. In another large bowl, whisk the egg whites, milk and oil until combined. Add all of the egg mixture to the dry mixture and stir until moistened (batter is OK lumpy). Preheat a skillet on medium heat and spray the pan with PAM or spray. After a few minutes, pour 1/4 cup batter on the skillet. 

Cook on medium for 2 minutes. Flip and let sit for another 1-2 minutes. 



Serve with lite syrup and raspberries.
