Delicious Homemade Apple Muffins Recipe: Warm, Buttery, and Irresistible

I could hardly wait to make these because they sounded SO good and I literally ate every single one of them (not all in one sitting of course). They were so much better warm with a little bit of butter on top. This is also a DaVita recipe and has been replacing my 400 calorie, carb-loaded muffins that I have been eating in the morning. These were pretty easy to make and even 11 year old Jace enjoyed these!  Ingredients: 1 1/2 cups chopped apples 2 eggs 1 cup monkfruit 1/2 cup vegetable oil 1/4 cup water 1 tbsp vanilla 1 1/2 cups flour 1 tsp baking soda 1 1/2 tsp cinnamon Directions: Preheat oven to 400 degrees and spray a muffin pan with spray. Peel and cut apples into small pieces (I peeled the peeling off as much as I could before cutting into pieces). Whisk eggs in a large bowl. Add monkfruit, vegetable oil and water. Mix well and add vanilla.  In a separate bowl, combine the flour, baking soda and cinnamon.  Stir flour mixture into egg mixture. Batter will be lumpy. Add apple piec

Jamaican Jerk chicken

Well I thought I took more photos of the Jamaican Jerk Chicken but I guess I only have a few of the final product. This is another recipe from DaVita which is our new favorite for kidney-friendly recipes. We let this marinade overnight. We replaced onion with onion powder, garlic cloves with garlic powder, we did not use a chili pepper or habanero, and didn't use green onions. We also used ground ginger in place of fresh ginger. It turned out really really good as we baked it and then broiled it. The DaVita recipe calls for grilling but we decided to bake instead. We served ours with white rice and macaroni and cheese - although a kidney doctor/dietician recommended jasmyne rice instead of white rice so we tend to eat jasmyne rice when we can. Because I didn't add any chili peppers or anything spicy, it was more on the sweet side but still had a good balance. Would make this again!  Ingredients:  1 tbsp onion powder 2 tsp ground ginger 1 tbsp garlic powder 2 tbsp white vinegar

Healthy Cinnamon Pancakes

It has been so long since I have written a blog post. Almost a month which is extremely unusual for me. I have a few in draft but didn't end up finishing them - hopefully I can get them up shortly for you guys. Summer is finally over for my 11 year old and he started school earlier this week. Last week my sisters were in town for the week. We celebrated four cousins birthdays with a piñata, face painting, cupcake decorating, and a bounce house. Football is back (pre-season) so it's been fun watching the Broncos and Kevin and I are both working full-time so it's been a crazy time. Today I'm taking Kevin and Jace to get well-deserved pedicures (Jace's first one) and last night we spent hours playing War.  I workout 3X per week (I'm on my 8th week) and I have lost 4 pounds since last week.
