Air Fryer Dorito Chicken Nuggets
What better way to spend my 6th day being sick writing a blog and watching re-runs of Full House? I knew that going to Utah and riding on a plane days after the mask mandate dropped was too good to be true. It's given me every reason to slow down and work in my bed when needed so no complaints. My mind wants to do all the things and my body is like....not today!
In fact, with me being gone and then being sick, most of the dinner meals we have had lately have been processed, fast food, or quick meals. I'm hoping I can catch up on my food blogs from weeks before I left since we will be doing a food pickup later today. Last night I was able to make Air Fryer Dorito Chicken Nuggets. I can't believe I have never heard of this before. This recipe uses both breadcrumbs and Nacho Cheese Doritos as the breading. The original recipe is from Sweet and Savory Meals HERE. I used about one and a half chicken breasts and turned that into about 20+ chicken nuggets. Kevin LOVED these!!
Ingredients:
20 chicken ingredients
1 bag of nacho cheese doritos
1 cup panko breadcrumbs
1 cup flour
2 tbsp paprika powder
1 tbsp ranch powder
4 eggs
Avocado cooking spray
Directions:
Preheat Air Fryer to 380 degrees. Add doritos to a ziplock bag and use a rolling pin to crush them until they resemble panko breadcrumbs. Add the doritos to the panko crumbs in a small bowl and set aside. In another bowl, mix flour, paprika, and ranch in another bowl. Place the eggs in another bowl and use a spoon to beat them.
Serve with Light Ranch dressing or a BBQ sauce. Enjoy!
