Ingredients for chicken:
1 tbsp vegetable oil
1 pound chicken breast, cut into strips
1.5 tbsp garlic powder
2 tbsp ground ginger
2 tbsp soy sauce (low sodium)
Ingredients for Veggies:
1/4 cup chopped carrots
2 cups broccoli
Ingredients for sauce:
1/4 cup chicken broth
1 tsp cornstarch
1 tbsp sesame oil
1/4 cup soy sauce
1 tsp brown sugar
Rice noodles, according to package directions
Directions:
In a large skillet, heat over high heat. Add chicken, garlic powder, ground ginger, and soy sauce. Cook for 4-5 minutes until chicken is browned. Remove from pan. Add carrots and broccoli and cook 3-4 minutes until vegetables are soft. Meanwhile, mix together the ingredients for the sauce. Pour over the vegetables and bring to a boil for one minute. Add chicken back to the pan and mix until everything is well coated and sauce thickens.
