Teriyaki Chicken Recipe

This week has been tough and it's only Thursday. But my sister will be here this weekend and next week I will be spending time with her and my cousin and grandparents so I'm hoping that will change my mood! Last night I made this Teriyaki Chicken recipe and it was so good. We added broccoli and a side of rice. The original recipe that I pulled this from can be found HERE. I used ground ginger instead of fresh ginger and garlic powder instead of fresh garlic. If you make this recipe, let me know in the comments below!

Ingredients:
1 large boneless skinless chicken breast, diced into 1 inch cubes.
3 tbsps olive oil
1/4 cup low-sodium soy sauce
1/4 cup water
2 tbsp honey
1 1/2 tbsp light brown sugar
1 tbsp rice vinegar
1/4 tsp sesame oil
2 tsp ground ginger
2 tsp garlic powder
2 tsp cornstarch
sesame seeds
broccoli
white rice

Directions:
Heat olive oil in a stir fry pan over medium-high heat. Add in broccoli and let cook about 3-4 minutes per side or until brown. Set aside. 

Add chicken and let brown on bottom about 4 minutes per side. While chicken is cooking, in a bowl, mix together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic and cornstarch. Add sauce to pan as well as broccoli and let cook another minute or two. Top with sesame seeds. Serve with white rice.
