Sweet Potato Wedges Recipe

I'm gonna try and knock out two blogs today for you guys before I have to pick Jace up from school. Last night I made these Sweet Potato Wedges as well as Homemade Chicken Nuggets/Tenders which will be my next blog. These Sweet Potato Wedges are kidney-friendly, so delicious and from the National Kidney Foundation. Although Jace didn't like them, I loved them! And if you are a fan of a sweet side dish, you will want to try these. I purchased Sparkling Apple Cider and reduced it and topped it on the sweet potatoes. It gave it a nice, sweet - but not too sweet, syrup topping. This recipe is super easy to make and only uses four ingredients. I purchased the sweet potatoes from Trader Joe's. Ingredients:
2 cups Sparkling Apple Cider
1/2 tsp Almond Extract
2 large Sweet Potatoes, cut into 8-10 wedges
Olive Oil

Directions:
Simmer sparkling apple cider in a saucepan over medium heat for 45 minutes or until it's a little thick. Add almond extract and let cool to room temperature. 

Cut/slice sweet potatoes into wedges. Preheat oven to 350 degrees. Place sweet potatoes on a PAM or sprayed cookie sheet and spread out sweet potatoes. 

Top with olive oil and bake 45 minutes or until they are beginning to brown. Turn several times while cooking. Add the sparkling apple cider reduction to the sweet potatoes and cook in the oven five more minutes. Serve as a side or a snack.
