Meatballs Subs
Last night we decided on Meatball Subs. The original recipe can be found HERE from AllRecipes. We made a few slight changes. Although messy, this is definitely one of my top favorite meals. Ingredients:
1 pound ground beef
3/4 cup Italian breadcrumbs
2 tsp Italian Seasoning
2 tbsp minced garlic
2 tbsp dried parsley
2 tbsp Parmesan cheese
1 egg
1 sourdough french baguette
1 tbsp oil
1 tbsp garlic powder
1 jar spaghetti sauce
3 slices provolone cheese
Directions:
Spray a baking sheet with PAM or cooking spray. In a medium bowl, mix by hand the ground beef, bread crumbs, Italian seasoning, minced garlic, parsley, Parmesan cheese, and the egg.
Shape into 12 meatballs and place on the baking tray.
Heat oven to 350 degrees. Bake for 20 minutes or until cooked through. In the meantime, cut the baguette into thirds and then cut each sandwich lengthwise. Brush with oil, season with garlic powder and slip the baguette into the oven during the last five minutes of the meatballs time so it gets lightly toasted. Warm the spaghetti sauce in a saucepan over low/medium heat. When meatballs are done, at them to the sauce using a slotted spoon.
Spoon onto baguette and top with provolone cheese. Return the the oven for three more minutes. Enjoy!
