Spicy Chicken Sandwich (Popeye's Copycat)
A few nights ago I made this fried chicken sandwich using a recipe from Gimme Delicious HERE. I actually made it for Kevin and Jace and I had pizza ;) He said it was really good but - even though it's meant to be a Popeye's copycat recipe - didn't taste like Popeyes. It could also be that we didn't use brioche buns and changed a few ingredients. There are several steps to this process so it was probably considered a "Medium" recipe on a scale of easy to hard. The chicken looked delicious though - it's a little spicy so I didn't try it, I don't really like spicy foods, but I'm taking Kevin's word that it was good :) Here goes:
Marinade:
- 1 large or 2 small boneless skinless chicken breast
- 1 cup milk and 1 tablespoon vinegar (or 1 cup buttermilk)
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
For the Breading:
- 1 cup flour
- 1/2 cup cornstarch
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon pepper
Spicy Mayo:
- 1/2 cup mayo
- 1 teaspoon Franks' Buffalo Sauce (or hot sauce)
- 1 teaspoon spicy taco seasoning
- 1/2 teaspoon garlic powder
Directions:
In a large bowl, mix together the chicken marinade (minus the chicken) - milk, vinegar, garlic powder, salt and pepper. Place in the refrigerator while you prepare the chicken.
Take the large chicken breast and slice it horizontally and then vertically so you have four decent pieces - the size of the bun. Add the chicken to the marinade and leave in the refrigerator until ready to fry.
