Low Carb Chicken Cordon Bleu Bake

Usually I plan my meals one week in advance, so when I went through this recipe for a low carb chicken cordon bleu, I had assumed it was similar to a regular chicken cordon bleu. I was wrong. Jace and I both had some and we both enjoyed it a lot but it's a bake, so it's quite different than a regular chicken cordon bleu dinner. 

This recipe is from Low Carb Yum. I have her cookbook but this recipe was one online. Her meals are super healthy and delicious. We copied this recipe except we replaced the parmesan cheese with mozzarella cheese and we used a smaller amount of chicken broth - her recipe said that people were commenting that it was too liquidy so I used less broth on purpose - and I did not use any pork rinds. This recipe was so different from what I had made before and I would love your thoughts on it. Comment below if you made this and let me know what you thought!

Ingredients:
1/4 cup mayonnaise
1/4 cup heavy cream
8oz cream cheese, softened
1/4 cup mozzarella cheese
1/2 tsp garlic powder
dash of pepper
8oz block of swiss cheese, chopped into squares
1 package of black forest ham, chopped into squares
1 bag of grilled and ready chicken
1/4 cup chicken broth



Directions:
Using a hand mixer, mix mayonnaise, heavy cream and cream cheese until well combined. 


Stir in mozzarella cheese, garlic powder, and pepper. Mix some more. Add in swiss cheese, ham, chicken and chicken broth and use a spatula to blend those in. 


Spread mixture in a casserole dish and bake for 350 degrees, 23 minutes. Once I cooked for 23 minutes, I took out and realized it wasn't too brown on the top so I baked for 5 more minutes. 


We served pita chips on the side and even used it to scoop up the chicken cordon bleu. Pretty delicious!
