Ingredients for Easy Crockpot Soup For Fall

• 1 30oz. bag of frozen diced hash browns
• *1 32 oz. box of chicken broth or *Vegetable Broth (this is equivalent to about 4 cups)
• 3 oz. of bacon bits
• 1 8oz package of cream cheese
• Cheddar cheese (to sprinkle on top, you can also swap cheddar out for three cheese, pepper jack, or a cheese of your liking)
• Black pepper

How to Make Potato Soup in a Crockpot
1. Turn crockpot on to low and add hash browns.

2. Add box of chicken broth.

3. Add cream of chicken soup 

Note: The original recipe called for 10oz of cream of chicken soup but I used a 22oz can and thought it tasted amazing!

4. Add 3 oz of bacon bits, and season with pepper (and salt, if desired).

5. I put the food on low for 6-7 hours.

6. An hour before you serve it, cut up the cream cheese and put it in the crockpot. 

Note: I recommend cutting the cream cheese into squares for better blending. After an hour on low, some cream cheese might still be a little chunky, so turning the heat to high for the last 30 minutes can help it blend more quickly.

7. Once the cream cheese is blended, move the crockpot to "warm" and serve. 

You can add shredded cheese and bacon bits on top. I prefer to have the bacon bits cooked in the soup as they are softer.

  4. I made it last night, and it turned out amazing!!! I used half of a package of bacon and crumbled it (my husband and I love bacon). I also added 1/2 of a chopped up onion. This will be in our rotation of meals!

  5. Love this recipe! I do Weight Watchers so I made a few subs to make it more "point friendly".
    Fat Free Cream Cheese for regular
    Low Sodium Chicken Broth
    98% Fat Free Condensed Cream of Chicken Soup

    I added some dried minced onion, minced garlic and lightly dried fresh basil. I also stirred about 1 cups of Fat Free Greek Yogurt (like you would sour cream) in just before serving.

    Turned out fantastic! I decided the recipe made about 12 cups so it equals 4 Freestyle Smart Points per cup (without cheese or bacon on top).

  7. Can you double this, like is there enough room in the crock pot? Having a soup cook off and there will be other soups like 7 or 8, feeding about 30 people, the favorite ones, everyone goes back for more. Just wondering how much it makes. Thanks! Love the variations not so sure about the sour cream though but like the whipped cream cheese. How did the Colby/Colby jack turn out?

    1. I haven't doubled it before but my guess is not enough room in the crockpot. Sometimes I notice when I double recipes it never tastes as good haha. Do you have two crockpots and maybe you can do two at once? I haven't made this since I posted this blog but everyone seems to love it!

  10. I made this on the stove tonight. I used o'brian frozen potatoes with onions, red peppers and green peppers. I used one can cream of chicken and one can cream of celery and added a can of drained corn. I also cooked bacon and added that. It was delicious!!!
