Easy Buffalo Chicken Recipe
If you enjoy an easy comfort food recipe that is ooey gooey, cheesy, juicy, tender, and flavorful, you will want to try this buffalo chicken macaroni and cheese. I love making comfort foods with a twist and this recipe is no different. This mac and cheese combines cheesy goodness with a creamy texture from milk and whipped butter, buffalo sauce for a kick, and soft, tender, chicken pieces. Throw that all together and you have a delicious, filling meal that the whole family will love. If you are like Kevin where you *have* to have some sort of meat in every meal, this is the one for you! This is comfort food, elevated.

Ingredients for Buffalo Chicken

• One large chicken breast
• Pepper
• *2-3 cups chicken broth (this is a free range, organic chicken broth)
• 1 tsp paprika

Ingredients for the Macaroni and Cheese

• 16 oz elbow macaroni pasta
• 2 tbsp butter (we used a whipped butter)
• 2 tbsp flour
• Pepper, to taste
• 1 1/4 cup milk
• 1 1/2 cups shredded cheese of your choice (we did a Mexican blend), divided
• *1/2 cup buffalo sauce  (this one is a healthier version with Avocado Oil)

                                                                                                                                          
How to Make Buffalo Chicken Mac and Cheese (Step-by-Step)
Step #1 Prepare the chicken
I prepared the shredded chicken ahead of time by adding one large chicken breast to a slow cooker. Add chicken broth, some pepper, paprika, and if you would like, garlic and onion powder. Set on high for 3-4 hours until you can shred. Keep the lid closed and set aside until you are ready to make the macaroni and cheese.

Step #2 Prepare the pasta
Bring a large pot of water to a boil. Add in the macaroni and cook according to the packaged directions. Once it's done cooking, drain the pasta and set aside while you make the roux.

Step #3 Make the roux
In a large saucepan, melt the butter over medium-high heat. Add in the flour and stir about 1-2 minutes until golden. Slowly pour in milk and whisk constantly for 3-5 minutes, until the sauce is thickened. Season with pepper.

Step #4 Add the cheese
Stir in half (3/4 cup) of the cheese until melted and combined. Stir in the buffalo sauce and cooked macaroni shells. Add to a greased baking dish or pan.                                                                                 

Step #5 Add the chicken
Take the shredded chicken and spread on top of the macaroni and cheese. Preheat the oven to 350 degrees.

Step #6 Top with more cheese
Top the chicken with the remaining shredded cheese.

Note: If you love super ooey gooey cheese, I would suggest adding at least one more cup of cheese from the original recipe.

Step #7 Bake
Bake for 20 minutes or until cheese is golden.

Step #8 Serve
Top with Italian Seasoning and more pepper and serve immediately.

Storage & Reheating Tips
Store leftovers in an airtight container in the fridge for up to 4-5 days. Reheat in the microwave for 2 minutes or until warm.
